Niki Pavanelli

“Creativity begins where the recipe ends.”

Niki Pavanelli is a chef originally from Bologna, Italy, who has been passionate about cooking since a young age. His training and career led him to move to Spain at just 23 years old, where he has developed much of his culinary career. Before settling in Tenerife, he worked on important gastronomic projects, including experiences alongside the Adrià brothers at restaurants such as elBulli and elBarri in Spain, which helped refine his technique and creative approach.

Since 2018, Pavanelli has led the kitchen at Il Bocconcino restaurant, located in the Royal Hideaway Corales Resort in Costa Adeje (Tenerife). There, he has developed his own unique style that fuses traditional Italian cuisine with contemporary influences and the use of local Canarian products, especially seafood, meats, and native vegetables. His style is described as “progressive Italian cuisine,” reinterpreting classic flavors such as carbonara, tonno vitellato, and tortellini, combining Italian techniques with ingredients from Tenerife.

Thanks to his work, Il Bocconcino has been awarded its first Michelin Star, in addition to receiving the Repsol Sun and being included in the prestigious 50 Top Italy guide among the best Italian restaurants in the world.

Pavanelli’s culinary philosophy centers on authentic Italian cuisine adapted with local Canarian products, artisanal preparations such as fresh pasta, homemade sausages, and bread baked daily, and a respect for sustainable and locally sourced ingredients. He also participates in gastronomic events and culinary congresses, sharing his expertise in blending tradition and creativity.
