The establishment presents a unique concept, based on a pizza tasting format, an unusual idea within the sector that brings freshness, dynamism, and a more exploratory gastronomic approach. In this regard, one of the key aspects to improve is the uniformity of the dough, as currently the same dough is used for both padellino and contemporary pizza. Each style requires different hydration, fermentation, and cooking processes to properly express its character.
For this proposal—as original as it is ambitious—to reach its full potential, it’s essential to differentiate the doughs, techniques, and preparation times, allowing each pizza to faithfully represent its style. With this additional technical work, the tasting format could become not only a differentiating factor but also an innovative benchmark within the pizza world.
